Pumpkin Spice Oatmeal Chocolate Chip Cookies

I needed some cookies yesterday and I wanted to add a little pumpkin flare for autumn. I also have been wanting to try making cookie dough in the food processor, I was a little skeptical but it WORKED!! So easy!!

It’s time to get in the spirit over here 🍁

  • 1/2 cup vegan butter

  • 1/2 cup coconut sugar

  • 1 tsp vanilla extract

  • 1/3 cup of pumpkin pure

  • 1/4 cup of almond milk

  • 1 tsp of pumpkin spice

  • 3/4 tsp of baking soda

  • pinch of salt

  • 1/2 cup oats

  • 1 3/4 cups of all purpose flour (i used organic einkorn)

  • 1 cup vegan chocolate chips


  • Pre heat oven to 360 and line a baking tray

  • Using a food processor, mix the butter and sugar until it’s creamy

  • Add in vanilla, pumpkin, nut milk and pulse

  • Add salt, baking soda, oats, flour and mix until well combined

  • Stir in vegan chocolate

  • Using an ice cream scooper or a spoon take cookie dough and line it on the parchment paper

  • Place in the oven and bake for 15-20 minutes until golden brown
